(La pâte à raviolis) - La pasta à raiola

Ingredients for 4 people :

500 grams of flour.
3 eggs.
A mustard glass of warm water.
A half coffee-spoon of salt.
A soup-spoon of olive oil.


On the work bench make a large circle with the flour. Break the eggs in the center of this and add the salt, the oil,and half of the water. Mix the flour well into these ingredients. Add the remaining water so as to obtain a homogeneous and elastic ball. Work it in your hands for a while, and then let it rest for an hour wrapped in a tea towel.
