NICE CARNIVAL 2005

An invitation to the hors d’oeuvres

File Nr 9
Raw ham and fresh figs.
(Le jambon cru à la figue fraîche) - Jamboun e bellona

15 minutes
Cooking time : If required, 5 minutes

Ingredients for 4 people :

4 slices of raw ham
8 good quality figs
Pepper, sage.

Here are two versions of this delicious and original entrée, one cold and the other hot. In our region where water could sometimes be lacking, for many years figs replaced melons as an accompaniment to the dried ham which came either from the mountains or from our Italian neighbours.
Place the figs in the refrigerator at least one hour in advance. Serve them with a slice of ham. The taste of the fig will enhance best that of the raw ham, and your presentation will be perfect if you can find a nice fig leaf to accompany each plate.
The hot version of this recipe also deserves to be tried.
Abundantly cover the slice of ham with pepper and roll the very cold fig inside it with a sage leaf. Close it with a tooth-pick and place it in a hot oven for 5 minutes. To be eaten with a cool vin rosé or alternatively during the apéritif with a vin d’orange.

You enjoy food and want to discover our French Riviera, typical mediterranean cuisine, "La Cuisine Niçoise". Our recipes will bring you pleasure and health. Follow our instructions and enter a new world of tastes and emotions.

Second step: The SHOPPING
List all the ingredients and go to a colourful market where you will buy fresh vegetables, first class meat and fish. Enjoy the shopping and buy the best!

Third step: The COOKING
You may share the cooking of the meal with your friends (make sure they have some culinary experience!). Read the recipe, prepare the ingredients and let your imagination and feelings do the rest. If it smells good, it will be good.

Fourth step: The TESTING
Make your table as beautiful as can be and let the tasty dishes flavoured with olive oil, garlic, mediterranean aromatic herbs, dazzle your palate. Share your emotions with your friends. After the meal, discover the pleasure of a relaxing siesta under the sun (in summer, we suggest the shade of an olive tree). You will soon become a "Cuisine Niçoise" addict.
