An invitation to the hors d’oeuvres

Ingredients for 4 people :
4 slices of raw ham 8 good quality figs Pepper, sage.
Here are two versions of this delicious and original entrée, one cold and the other hot. In our region where water could sometimes be lacking, for many years figs replaced melons as an accompaniment to the dried ham which came either from the mountains or from our Italian neighbours. Place the figs in the refrigerator at least one hour in advance. Serve them with a slice of ham. The taste of the fig will enhance best that of the raw ham, and your presentation will be perfect if you can find a nice fig leaf to accompany each plate. The hot version of this recipe also deserves to be tried. Abundantly cover the slice of ham with pepper and roll the very cold fig inside it with a sage leaf. Close it with a tooth-pick and place it in a hot oven for 5 minutes. To be eaten with a cool vin rosé or alternatively during the apéritif with a vin d’orange.
